Pineapple Caipirinhas

- 2/3 cup sugar
- 12 mint leaves, torn, plus sprigs for garnish
- 1 fresh pineapple, peeled, cored and cut into small chunks (about 4 cups)
- 1 1/4 cups cachaca
Directions

1Combine the sugar, mint leaves and 3 cups pineapple chunks in a pitcher.

2Muddle with a wooden spoon until the sugar is dissolved and the pineapple is crushed.

3Stir in the remaining pineapple and the cachaca and refrigerate until cold, at least 30 minutes or up to 4 hours.

4Add 6 cups ice to the pitcher and stir vigorously.

5Divide among glasses and garnish with mint sprigs.
