Pineapple Cake

- 2 eggs
- 1 (20 oz.) can pineapple with juice
- 2 c. flour
- 2 tsp. baking soda
- 1 c. white sugar
- 1 c. brown sugar
- 1 c. chopped nuts (walnuts)
Directions

1Take large bowl and beat 2 eggs until fluffy (mix by hand). Add crushed pineapple (juice and all); mix slowly.

2Add sugar, brown and white, then slowly add flour and baking soda.

3Do not mix fast because you will make air pockets, then add nuts.

4Bake at 350° for 45 to 50 minutes.

5Bake in ungreased 13 x 9 x 2-inch baking pan.

6Check with knife; must be clean, then let cool in pan.

7Cut in 2 1/2-inch squares.

8Take out of pan with spatula. Place on plate.
