  • 2 cups Flour
  • 2 teaspoons Baking Soda
  • 2 cups Sugar
  • 2 whole Eggs
  • 20 ounces, weight Crushed Pineapple In Juice
  • 1 cup Chopped Walnuts
  • 8 ounces, weight Cream Cheese (1 Brick)
  • 1 stick Butter (1/2 Cup)
  • 1-1/2 cup Confectioners Sugar
  • 1 teaspoon Vanilla

    Cake:

    Preheat oven to 350 degrees.

    Combine the flour, baking soda and sugar. Stir to combine. Add the pineapple, the juice and the eggs. Mix well. Add walnuts and stir to incorporate.

    Cook in two 9x12 pans at 350 degrees for 40 minutes.

    Frosting:

    Beat cream cheese and butter. Add vanilla and confectioner's sugar and beat to combine.

    Frost when the cake is cool.
