  • 3 eggs
  • 2 c. sugar
  • 1 c. oil
  • 1 Tbsp. vanilla
  • 8 oz. can crushed pineapple with juice
  • 2 c. grated carrots
  • 3 c. flour
  • 1 Tbsp. cinnamon
  • 1 tsp. salt
  • 2/3 c. chopped nuts
  • 1 tsp. soda

Directions

    Combine eggs, sugar and oil and beat until fluffy.

    Add all other ingredients and bake in greased and floured bread pan for 1 hour at 350°.
