- 2 c. all-purpose flour
- 2 c. sugar
- 1 tsp. each: soda and baking powder
- 1 tsp. cinnamon
- 3 c. shredded carrots
- 1 (8 1/4 oz.) can crushed pineapple
- 1 c. oil
- 1/2 c. coconut
- 4 eggs
Directions

1Grease and flour 2 round cake pans.

2Stir flour, sugar, salt, baking powder and soda and cinnamon together.

3Add carrots, undrained pineapple, oil, coconut and eggs; beat well.

4Bake at 350° for 35 minutes.

5Cool on rack.
