- 4 c. flour
- 1 c. brown sugar
- 1 1/2 c. sugar
- 4 tsp. baking soda
- 4 tsp. cinnamon
- 1 tsp. mace
- 1 tsp. salt
- 1 lb. carrots, peeled and grated
- 1 (15 to 20 oz.) can crushed pineapple, drained
- 6 eggs, beaten
- 1 c. vegetable oil
- 4 tsp. vanilla
- 1 c. pecans, chopped
Directions

1Preheat oven to 350°.

2In mixing bowl, mix sifted flour, sugar, baking soda, cinnamon, mace, salt and sugars.

3Add carrots, tossing to coat.

4In mixing bowl, combine pineapple, eggs, oil and vanilla.

5Pour into original ingredients, stirring to blend. Bake 25 to 30 minutes. Cool at least 10 minutes.
