Pineapple Casserole

  • 1 (20 oz.) pineapple tidbits
  • 1 c. shredded cheddar cheese
  • 1/2 c. sugar (Splenda or Sweet and Low can be used, verify package for substitution amounts)
  • 5 Tbsp. flour
  • 1/2 stick butter, melted
  • Ritz Crackers, crumbled (enough to cover casserole)

Directions

    Drain pineapple and put in bottom of a 10 inch pie plate or 8 x 10 inch baking dish. Mix cheese, sugar and flour. Sprinkle over pineapple. Crumble crackers over cheese topping and drizzle melted butter over crackers. Bake at 350° for 30 minutes. Recipe can be doubled to use a 9 x 13 inch baking dish.
