  • 2 (20 oz.) cans pineapple chunks
  • 1 c. sugar
  • 2 c. grated Cheddar cheese (8 oz.)
  • 6 Tbsp. flour
  • 1/2 c. melted butter (1 stick)
  • 1 c. Ritz cracker crumbs
  • 6 Tbsp. pineapple juice

Directions

    Drain pineapple and reserve the juice.

    Combine pineapple, cheese and butter.

    Mix sugar and flour; add pineapple juice.

    Add to pineapple and cheese mixture.

    Stir well.

    Bake in 2-quart casserole dish for 20 minutes at 300°.

    Add cracker crumbs; return to oven until crumbs are hot.
