Pineapple Casserole

  • 2 cans crushed pineapple, drained (save juice)
  • 6 Tbsp. plain flour
  • 6 Tbsp. pineapple juice
  • 2 c. Cheddar cheese, grated
  • 2 c. crushed Ritz crackers (1 stack)
  • 1 stick melted margarine

Directions

    Mix together flour and pineapple juice.

    Pat in buttered 9 x 13-inch dish.

    Spread pineapple on crust.

    Add Cheddar cheese on top of pineapple.

    Mix crushed Ritz crackers with melted margarine.

    Sprinkle on top of cheese.

    Bake 25 to 30 minutes or until bubbly.

    Very good with ham or chicken.
