- 2 cups self-rising flour
- 3/4 cup sugar
- 1 cup canned crushed pineapple, with juice
- 2 eggs
- 2 tablespoons vegetable oil
- 3/4 cup grated sharp Cheddar cheese
- 1/2 cup chopped walnuts
- 1/2 teaspoon pineapple extract
Directions

1Preheat oven to 350 degrees.

2Sift flour into a large mixing bowl and add sugar.

4In a separate bowl, mix pineapple, eggs, and oil and add to flour mixture, mixing well.

5Fold in cheese, nuts, and pineapple extract.

6Pour into a greased 9 x 3-inch loaf pan.

7Bake for 1 hour.

8Cool and turn out from pan, allowing to cool completely before slicing.
