- 1/2 c. sugar
- 1 Tbsp. cornstarch
- 1 (9 oz.) can crushed pineapple, not drained
- 1 (8 oz.) cream cheese, softened
- 1/2 c. sugar
- 1/2 tsp. salt
- 2 eggs
- 1/2 c. milk
- 1/2 tsp. vanilla
- 1/4 c. chopped pecans
- one (9-inch) unbaked pie shell
Directions

1Blend sugar and cornstarch together.

2Add to undrained crushed pineapple.

3Cook, stirring constantly, until thick and clear. Cool and set aside.

4Blend cream cheese, sugar and salt.

5Add eggs, one at a time.

6Blend in milk and vanilla.

7Spread cooled pineapple into unbaked pie shell.

8Pour cream cheese mixture on top.

9Sprinkle with chopped pecans.

10Bake at 400° for 10 minutes, then 325° for 50 minutes.
