  • 1 (16 to 18 oz.) crushed pineapple
  • 2/3 c. sugar
  • 2 Tbsp. cornstarch
  • 1 1/2 c. graham cracker crumbs
  • 1/3 c. melted butter
  • 3 (8 oz.) pkg. cream cheese (soft)
  • 1 c. sugar
  • 4 eggs (room temperature)
  • 1 pt. sour cream
  • 1 tsp. vanilla

    Day before (or earlier in day, since it needs to cool), make filling.

    In saucepan, mix undrained pineapple with sugar.

    Bring to boil over medium heat.

    Mix cornstarch with 1/4 cup cold water. Add to mixture, then cook and stir one to two minutes longer. Remove from heat and cool.
