- 1 (16 to 18 oz.) crushed pineapple
- 2/3 c. sugar
- 2 Tbsp. cornstarch
- 1 1/2 c. graham cracker crumbs
- 1/3 c. melted butter
- 3 (8 oz.) pkg. cream cheese (soft)
- 1 c. sugar
- 4 eggs (room temperature)
- 1 pt. sour cream
- 1 tsp. vanilla
Directions

1Day before (or earlier in day, since it needs to cool), make filling.

2In saucepan, mix undrained pineapple with sugar.

3Bring to boil over medium heat.

4Mix cornstarch with 1/4 cup cold water. Add to mixture, then cook and stir one to two minutes longer. Remove from heat and cool.
