  • 4 eggs, beaten
  • 2 c. sugar
  • 1 c. coconut
  • 1 (8 1/2 oz.) can pineapple (use juice)
  • 1/2 c. butter, melted and cooled
  • 1 Tbsp. flour
  • 2 tsp. vanilla
  • 1 Tbsp. cornmeal

    Blend and pour in a 9-inch unbaked pie shell.

    Bake in 400° oven for 15 minutes.

    Turn oven temperature down to 350° and bake another 10 minutes.

    Do not overbake.

    (The 2 oven settings will prevent the crust from becoming soggy.)
