- 2 c. sugar
- 1 c. coconut
- 1 (8 1/2 oz.) can pineapple (use juice)
- 1/2 c. butter, melted and cooled
- 1 Tbsp. flour
- 2 tsp. vanilla
- 1 Tbsp. cornmeal
Directions

1Blend and pour in a 9-inch unbaked pie shell.

2Bake in 400° oven for 15 minutes.

3Turn oven temperature down to 350° and bake another 10 minutes.

4Do not overbake.

5(The 2 oven settings will prevent the crust from becoming soggy.)
