  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 3 lb. boneless, skinless chicken breasts, diced or stripped
  • 1 (16 oz.) can pineapple chunks
  • 2 Tbsp. red wine vinegar or cider
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 medium tomatoes, chopped or canned
  • garlic to taste

Directions

    In a large skillet, heat oil until hot.

    Add onion and garlic until onion wilts. Add chicken. Cook until brown.

    Add rest of ingredients. Simmer about 6 minutes. Serve over rice or noodles.
