Pineapple Chicken

Ingredients
- 1 1/2 to 2 lb. boneless chicken breasts, thinly sliced
- 2 Tbsp. vegetable oil
- 1 lb. mushrooms, sliced
- 2 Tbsp. soy sauce, divided
- 1 tsp. onion powder
- 1/4 tsp. ginger
- 2 Tbsp. cornstarch
- 15 oz. crushed or chunked Dole pineapple with juice (not syrup, reserve juice)
- 4 oz. mandarin oranges, drained
- rice
Directions

1Quickly saute chicken in hot vegetable oil.

2Turn heat down to medium and add mushrooms.

3Mix 1 tablespoon soy sauce, onion powder and ginger.

4Add to chicken in frying pan.

5Mix cornstarch, remaining soy sauce and reserved pineapple juice.

6Add to chicken and stir until thickened.

7Add water if desired for thinner sauce. Add pineapple and oranges just before serving.

8Serve over hot white rice.
