  • 2 lb. chicken, in serving pieces
  • 1/3 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. salad oil
  • 3/4 c. sweetened pineapple juice
  • 2 Tbsp. shoyu
  • 2 Tbsp. brown sugar, packed
  • 1 c. pineapple chunks, drained

Directions

    Dredge chicken in flour, salt and pepper coating.

    Brown in hot oil and drain.

    Combine pineapple juice, brown sugar and soy sauce.

    Pour over browned chicken. Cover and simmer for 45 minutes. Add pineapple chunks and cook another 5 minutes.
