Pineapple Chiffon Pie

  • vanilla wafer crust
  • 1 can Carnation cream, cooled in freezer
  • 1 egg
  • 1 c. sugar
  • 1 1/2 c. unsweetened pineapple juice
  • 1 pkg. any flavor jello (lime or strawberry is best)
  • a couple drops of appropriate food coloring (if desired)

    Beat the egg and sugar well.

    Add juice.

    Let come to boil 1 minute or longer.

    Pour over jello and mix.

    Let cool until thickened but not fully set.

    Whip cream until thick.

    Fold in jello mixture.

    Pour into 10-inch wafer crust.

    Chill and store in freezer.

    Let set out a few minutes before cutting.
