Pineapple Cinnamon Ice Cream

- 2 cups Heavy Whipping Cream
- 1-1/2 teaspoon Ground Cinnamon
- 1/2 cups Brown Sugar
- 2 whole Eggs
- 1/2 cups Granulated Sugar
- 1 cup Milk
- 1 cup Pureed Fresh Pineapple Or Canned Crushed Pineapple (with Juice)
Directions

1Bring the cream to a simmer over medium heat, add the cinnamon and brown sugar and stir. Remove from heat and let cool for a few minutes.

2Whip the eggs and white sugar together until light and fluffy. Add the milk to the cooling cream mixture. Slowly whisk the egg mixture into the cooling cream mixture. Turn the heat back on and cook over medium heat until the mixture begins to thicken, about 3-4 minutes. Remove from heat and let cool.

3Chill the cream mixture in the refrigerator until cold. Once cold, stir in the fresh pineapple.

4Add the ice cream to your ice cream machine, and make it according to the machine's directions. Once it's done, remove from your ice cream machine and place the ice cream in the freezer until firm. Serve and enjoy!
