Pineapple Coconut Balls

- 1 c. sugar
- 1/2 c. shortening
- 1 egg
- 1/2 c. drained crushed pineapple
- 2 c. flour
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1 can flaked coconut
- 1/2 c. pecans, coarsely chopped
Directions

1Combine sugar and shortening in large bowl.

2Beat at medium speed with electric mixer until blended well.

3Beat in egg.

4Mix in pineapple.

5Combine flour, salt and baking soda.

6Add gradually to creamed mixture at low speed.

7Mix until well blended.

8Stir in coconut and nuts with spoon.

9Drop by teaspoon 2 inches apart onto greased baking sheet.

10Bake in preheated oven at 375° for 10 to 12 minutes.

11Remove to cooling rack and enjoy.

12Makes about 4 dozen cookies.
