Pineapple-Coconut Squares

- 1/2 c. soft butter or margarine
- 3/4 c. sugar
- 1 1/4 c. all-purpose flour
- 1 large can crushed pineapple, drained
- 1 egg, well beaten
- 1 Tbsp. margarine, melted
- 1/2 tsp. vanilla
- 1 can coconut
Directions

1Preheat oven to 350°.

2In bowl, at medium speed, cream the butter with 1/4 cup sugar.

3Beat in flour to form a soft dough. Press dough evenly on bottom of casserole and 1/2 inch up sides. Bake until brown, about 15 minutes; let cool.

4Spread pineapple over crust.

5Add remaining 1/2 cup sugar to egg.

6Add melted butter, vanilla and coconut.

7Spread mixture over pineapple.

8Bake at 350° for 20 minutes or until brown.

9When cool, cut into squares.
