  • 1 c. shortening (I use Crisco)
  • 2 c. brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 large can crushed pineapple
  • 4 c. flour
  • 2 tsp. baking powder
  • 2 tsp. soda
  • 1 tsp. salt
  • 1 c. chopped nuts

Directions

    Blend shortening and sugar; add eggs and vanilla.

    Mix well. Add dry ingredients, nuts and pineapple.

    Drop by teaspoons on greased cookie sheet.

    Bake at 365° for 15 minutes or when cookie springs back when pressed with fingers.
