  • 3/4 c. shortening
  • 1 1/2 c. sugar
  • 2 eggs
  • 1 c. drained crushed pineapple
  • 1 tsp. vanilla
  • 3 c. flour
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • cream cheese icing

Directions

    Cream shortening and sugar together. Blend in eggs; beat well. Sift flour, salt, soda and baking powder together. Add to mixture. Add pineapple and vanilla. If batter is stiff, add a little of juice. Drop by spoonfuls on greased cookie sheet. Bake at 350° for 12 to 15 minutes. When cool, add icing to each cookie.
