- 1 1/3 c. sugar
- 1/3 c. cornstarch
- 2 c. pineapple juice
- 2 eggs
- 1/4 c. margarine
- 1 1/3 c. crushed pineapple
- 1 tsp. lemon juice
Directions

1Combine sugar, cornstarch and pineapple juice.

2Cook over low heat until thickened, stirring constantly.

3Pour a few tablespoons of the hot liquid over beaten eggs and stir well.

4Return to stove and cook another 5 minutes over very low heat, stirring constantly. Stir in margarine, lemon juice and crushed pineapple.

5Cool and serve with a dollop of whipped topping.
