- 2 c. four
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1/2 c. shortening
- 1/2 c. granulated sugar
- 1/2 c. brown sugar
- 2 eggs
- 1/2 c. crushed pineapple
- 1/2 c. pineapple juice
- 1 tsp. vanilla or pineapple flavoring
- 1 small pkg. mint chocolate chips
Directions

1Sift together first 4 ingredients and set aside.

2Mix together shortening, white sugar and brown sugar; blend in 2 eggs and beat together 1 minute.

3Add pineapple and juice, then dry ingredients; blend.

4Add flavoring and chocolate chips.

5Fill cupcake cups 3/4 full.

6Bake at 350° for 20 to 25 minutes.

7Frost when cool.
