- 1/4 c. soft margarine
- 1/2 c. sugar
- 1 egg
- 1 Tbsp. lemon extract
- 8 1/2 oz. crushed pineapple, drained (save juice)
- 2 1/2 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 1/4 tsp. soda
- pinch of salt
- 1/2 c. chopped dates
- 1/4 c. water
Directions

1Combine sugar, egg, margarine and flavoring and beat until smooth.

2Add dry ingredients alternating with pineapple and blend with a whisk.

3Fold in dates.

4Add juice to water and use 1/4 cup of liquid.

5Blend well.

6Pour into well-greased loaf pans.

7Bake at 375° for 55 minutes.

8This makes 2 (7 1/4 x 3 1/2-inch size) loaves.
