Pineapple Delight Cake

  • 2 c. flour
  • 2 c. sugar
  • 2 eggs
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 (20 oz.) large can crushed pineapple and syrup
  • 1 stick margarine
  • 1 c. sugar
  • 2/3 c. evaporated milk
  • 1 c. chopped nuts
  • 1 c. coconut

Directions

    Blend first 7 ingredients in bowl just until mixed.

    Pour into 13 x 9 x 2-inch pan and bake 30 minutes at 350°.

    While cake bakes, make icing.

    Simmer margarine, sugar and milk 5 minutes after reaching bubbly stage, stirring constantly.

    Remove from heat, add coconut and nuts.

    Mix in well.

    Pour over cake when removed from oven.

    Let cool before serving.
