Pineapple Dessert

Ingredients

  • 3/4 lb. vanilla wafers, rolled fine
  • 1/2 c. butter
  • 1 1/2 c. xxx sugar
  • 2 eggs
  • 2 1/2 lb. can crushed pineapple
  • 1 c. whipping cream
  • 1/2 c. pecans, chopped

Directions

    Put 2/3 of crumbs in bottom of dish.

    Cream butter and sugar; beat in eggs 1 at a time.

    Spoon mixture into pan over crumbs and spread.
  4. 4
    Put pineapple over cream mixture.
  5. 5
    Whip the whipping cream and put on top of pineapple.
  6. 6
    Sprinkle pecans over cream, then cover with remaining crumbs.

    Chill in refrigerator a couple of hours before serving.

    Cut into 2-inch squares and decorate with a nut or cherry.
