- 2 tsp. sugar
- 1 Tbsp. cornstarch
- 1 well beaten egg
- 16 oz. can crushed pineapple
- 1/3 c. beaten stiff heavy cream
- 1/2 tsp. vanilla
Directions

1Mix sugar with cornstarch and add to egg.

2When well mixed, add 1/2 cup of liquid from pineapple and cook (low heat) over hot water until thickened.

3Remove from heat and add 1 cup of crushed pineapple and set aside to chill, then add 1/3 cup heavy cream and vanilla.

4Serve in sherbet glasses.
