Pineapple "Fondue"

  • 1/2 lb. vanilla wafers
  • 1/2 c. butter (1/4 lb.)
  • 1 1/2 c. powdered sugar
  • 2 eggs
  • chopped pecans
  • 1 can crushed pineapple
  • 1/2 pt. heavy cream, whipped

Directions

    Crush vanilla wafers and line bottom of greased 9-inch baking dish, setting aside a small amount.

    Cream butter, sugar and eggs and pour this mixture over wafer crumbs.

    Sprinkle chopped pecans on top.

    Drain liquid from pineapple and place over nuts.

    Top with whipped cream and the remaining wafer crumbs as decoration. Chill at least 4 hours.

    Can be made 1 to 2 days ahead.
