  • 2 c. flour
  • 1 1/3 c. sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 c. strained, crushed pineapple
  • 1/2 c. shortening
  • 1/2 c. milk
  • 1/2 c. pineapple juice
  • 2 eggs
  • 1 tsp. vanilla

    Sift dry ingredients.

    Add shortening, 1/4 cup milk and pineapple juice and beat well.

    Add eggs and beat again.

    Then add remaining 1/4 cup milk, vanilla and pineapple.

    Bake in two 9-inch cake pans in 375° oven about 30 minutes.

    Ice with seven-minute icing or your own favorite icing.
