  • 1 cup fresh or frozen pineapple chunks
  • 2 Tbs. mint leaves
  • 2 tsp. lime juice
  • 1/4 tsp. grated fresh ginger
  • 6 oz. non-fat Greek yogurt
  • 1 Tbs. chia seeds
  • 2 tsp. honey (optional)

Directions

    Puree pineapple chunks with mint leaves, lime juice, and ginger in blender until mint is finely chopped.

    Add Greek yogurt, and blend until smooth.
