- 1 cup fresh or frozen pineapple chunks
- 2 Tbs. mint leaves
- 2 tsp. lime juice
- 1/4 tsp. grated fresh ginger
- 6 oz. non-fat Greek yogurt
- 1 Tbs. chia seeds
- 2 tsp. honey (optional)
Directions

1Puree pineapple chunks with mint leaves, lime juice, and ginger in blender until mint is finely chopped.

2Add Greek yogurt, and blend until smooth.

3Stir in chia seeds and honey (if using).
