- 2 c. flour
- 4 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. shortening
- 1/2 c. sugar
- 1 egg
- 1 c. undrained crushed pineapple
Directions

1Sift flour; measure.

2Add baking powder and salt; sift again. Cream shortening; add sugar gradually.

3Continue beating until light and fluffy.

4Add egg and beat well.

5Stir in crushed pineapple; add flour mixture and stir just enough to moisten the dry ingredients.

6Do not beat.

7Fill greased muffin pans 2/3 full and bake at 400° for 20 to 25 minutes.

8Makes 12 to 15 medium size muffins.
