- 1/4 c. margarine
- 1 tsp. rum extract
- 1/2 tsp. baking soda
- 1 (8 oz.) can crushed pineapple, drained
- 1/2 c. coconut
- 1 egg
- 1 c. sour cream
- 1 1/2 c. flour
- 1/2 tsp. salt
Directions

1Combine the sugar, egg, margarine, sour cream and rum flavoring.

2Stir the dry ingredients together, then add the first mixture.

3Add pineapple and coconut.

4Put in 12 paper-lined or well-greased muffin cups.

5Bake at 375° for 20 minutes.
