  • 2 cup Flour
  • 4 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Sugar
  • 1 Egg
  • 6 tbsp Milk
  • 1/2 tsp Lemon Extract
  • 4 tbsp Butter, melted & cooled
  • 1 Zest of 1/2 a lemon
  • 1 cup Fresh pineapple, cut into 1/4 iinch pieces

    Preheat oven to 375F.

    Prepare muffin tins by lightly greasing each cup.

    Sift together the flour, baking powder, salt and sugar.

    In a separate bowl, beat the egg, milk and lemon extract until frothy.

    Add the butter and lemon zest, combine thoroughly,

    Spoon the batter into prepared muffin tins and bake for 14 to 16 minutes.
