Pineapple Nut Bread

Ingredients

  • 1 3/4 c. sifted flour
  • 1/2 tsp. salt
  • 1/4 tsp. soda
  • 1/2 c. raisins
  • 3/4 c. chopped walnuts
  • 3/4 c. golden brown sugar, firmly packed
  • 3 Tbsp. soft butter or margarine
  • 2 eggs (unbeaten)
  • 1 (8.5 oz.) can crushed pineapple (not drained)

Directions

    Measure first 3 ingredients into sifter; set aside.

    Plump raisins in boiling water; drain well and set aside with nuts. Gradually beat sugar into butter.

    Beat in eggs, one at a time. Add raisins and nuts.

    Sift in 1/2 of flour mixture; stir just until moistened and fairly smooth.

    Add undrained pineapple, then stir in rest of flour mixture.

    Gently spoon heavy batter into greased 9 x 5 x 3-inch loaf pan.

    Sprinkle with topping mixture.
