*Pineapple Nut Bread

  • 3 c. sifted flour
  • 4 tsp. baking powder
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 Tbsp. butter
  • 3/4 c. sugar
  • 1 egg
  • 1 small can evaporated milk
  • 1 Tbsp. lemon juice
  • 1 small (8 oz.) can crushed pineapple
  • 1 c. chopped nuts

Directions

    Cream butter and sugar; beat in egg.

    Stir in milk, lemon juice, pineapple with syrup and finally, the chopped nuts.

    Mix all dry ingredients and add.

    Stir just until all ingredients are dampened and evenly blended.

    Put into a well-greased 9 x 5-inch loaf pan.

    Line bottom of pan with greased paper.

    Bake at 375° for 55 minutes.
