- 1 (8 ounce) can crushed pineapple
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 12 teaspoons baking soda
- 1 teaspoon salt
- 4 eggs
- 2 cups sugar
- 1 12 cups vegetable oil
- 2 cups carrots, shredded
- 34 cup nuts, chopped
- 14 cup butter
- 1 (4 ounce) package cream cheese with pineapple
- 1 teaspoon vanilla
- 2 14 cups icing sugar, sifted
Directions

1Drain pineapple.

2Combine flour, baking powder, cinnamonm soda and salt; mix well.

3In large bowl, beat eggs; gradually beat in sugar and oil.

4Add dry ingredients; mix well.

5Stir in pineapple, carrots and nuts.

6Turn into a greased and floured tube pan.

7Bake at 350F for 60-70 minutes or until tester inserted in the center of the cake comes out clean.

8Let cool in pan for 25 minutes.

9Remove from pan; let cool completely before icing.
