  • 1 (8 ounce) can crushed pineapple
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 12 teaspoons baking soda
  • 1 teaspoon salt
  • 4 eggs
  • 2 cups sugar
  • 1 12 cups vegetable oil
  • 2 cups carrots, shredded
  • 34 cup nuts, chopped
  • 14 cup butter
  • 1 (4 ounce) package cream cheese with pineapple
  • 1 teaspoon vanilla
  • 2 14 cups icing sugar, sifted

    Drain pineapple.

    Combine flour, baking powder, cinnamonm soda and salt; mix well.

    In large bowl, beat eggs; gradually beat in sugar and oil.

    Add dry ingredients; mix well.

    Stir in pineapple, carrots and nuts.

    Turn into a greased and floured tube pan.

    Bake at 350F for 60-70 minutes or until tester inserted in the center of the cake comes out clean.

    Let cool in pan for 25 minutes.

    Remove from pan; let cool completely before icing.
