Pineapple Orange Souffle Recipe

  • 1 (8 1/4 ounce.) can Dole sliced pineapple in syrup
  • 1 env. unflavored gelatin
  • 1/4 c. plus 2 tbsp. sugar
  • 3 Large eggs, separated
  • 1 (6 ounce.) can Dole pineapple juice
  • 1 teaspoon grated orange peel
  • 1 c. whipping cream, whipped
  • 3 tbsp. orange marmalade, melted

    Drain pineapple, reserving all syrup.

    Cover pineapple slices with plastic wrap and chill.

    In a medium saucepan, combine gelatin with 1/4 c. sugar.

    Stir in egg yolks, then reserved pineapple syrup, pineapple juice and orange peel.

    Cook, stirring constantly, till gelatin is dissolved and mix is thickened (2 to 5 min).

    Remove from heat; cold.

    Beat egg whites till foamy.

    Gradually add in 2 remaining Tbsp.

    Continue beating till soft peaks form.

    Stir 1/4 egg whites into pineapple mix.

    Mix in remaining egg whites.

    Spoon into 2 (16 oz) round casserole dishes.

    Place 2 pineapple slices over each souffle.
