- 1 small or 1/2 medium size can crushed pineapple
- 1 c. juice (pineapple) and water mixed
- 1 egg
- 4 Tbsp. cornstarch
- 2/3 c. sugar
- 5 Tbsp. cold water
- 2 Tbsp. butter
Directions

1Drain juice from pineapple and add water to make 1 cup.

2Put this in saucepan with pineapple and butter.

3Bring to a boil. While this is cooking, beat egg and 5 tablespoons cold water, then dissolve cornstarch in this, then add sugar to it.

4Now add this mixture to the cooked mixture and continue to cook and stir 2 to 3 minutes more.

5Cool some and then put in baked pie shell and top with meringue.
