- 1 baked 8-inch pie shell
- 2 Tbsp. cornstarch
- 3/4 c. sugar
- 1/2 tsp. salt
- 2 3/4 c. crushed pineapple
- 2 eggs, separated
- 1 Tbsp. lemon juice
Directions

1Combine cornstarch, 1/4 cup of the sugar and salt in a saucepan.

2Add pineapple and cook, stirring constantly, until clear and thickened.

3Add egg yolks which have been beaten with 1/4 cup of the sugar.

4Cook for 1 minute.

5Cool.

6Then add lemon juice and pour into baked pie shell.

7Top with a meringue made by beating the 2 egg whites until quite stiff.
