- 2 Tbsp. cornstarch
- 1/2 c. sugar
- 2 eggs, separated
- 1 baked 8 or 9-inch pie shell
- 1/2 tsp. salt
- 1 (No. 2) can pineapple (crushed or chunk)
- 1 Tbsp. lemon juice
Directions

1Mix cornstarch, sugar and salt; add pineapple.

2Cook until clear and thickened.

3Add beaten yolks.

4Cook 1 minute.

5Cool. Add lemon juice.

6Pour into baked shell.

7Top with meringue made by folding 4 tablespoons sugar into stiffly beaten egg whites. Brown in a 325° oven.
