  • 2 Tbsp. cornstarch
  • 1/2 c. sugar
  • 2 eggs, separated
  • 1 baked 8 or 9-inch pie shell
  • 1/2 tsp. salt
  • 1 (No. 2) can pineapple (crushed or chunk)
  • 1 Tbsp. lemon juice

    Mix cornstarch, sugar and salt; add pineapple.

    Cook until clear and thickened.

    Add beaten yolks.

    Cook 1 minute.

    Cool. Add lemon juice.

    Pour into baked shell.

    Top with meringue made by folding 4 tablespoons sugar into stiffly beaten egg whites. Brown in a 325° oven.
