Pineapple Pound Cake

  • 1/2 c. shortening (4 oz.)
  • 1/2 c. butter
  • 2 3/4 c. sugar
  • 3 c. plain flour
  • 1 tsp. baking powder
  • 6 eggs
  • 1/4 c. milk (may use 1/4 c. evaporated)
  • 3/4 c. undrained pineapple

Directions

    Cream the butter, shortening and sugar. Add 1 cup flour at first.

    Add eggs, one at a time. Add milk, then remaining 2 cups flour.

    Mix undrained pineapple.

    Preheat oven to 325°. Bake 1 1/2 hours.

    Let cool 10 minutes before removing from pan.
