  • cooking spray
  • 3/4 lb. smoked turkey sausage, sliced
  • 1 1/2 lb. skinned boned chicken breasts
  • 1/2 c. all-purpose flour
  • 1 Tbsp. vegetable oil
  • 2 1/2 c. chopped celery
  • 2 c. chopped onion
  • 2 c. chopped green pepper
  • 1/2 c. chopped green onions
  • 4 cloves garlic, minced
  • 1 Tbsp. Creole seasoning
  • 1 Tbsp. low-sodium Worcestershire sauce
  • 2 tsp. hot sauce
  • 1/2 tsp. pepper
  • 3 bay leaves
  • 3 (14 1/4 oz.) cans fat-free, reduced sodium, chicken broth or homemade to equal amount

  • 6 c. cooked long-grain rice, cooked without salt or fat

Directions

    Coat a large nonstick skillet with cooking spray.

    Add sausage and cook 5 minutes or until browned on all sides.

    Remove sausage and set aside.

    Add chicken to skillet and cook 7 minutes on each side or until chicken is done.

    Remove chicken from skillet and let cool, then shred chicken and set aside.
