Pineapple Pound Cake

  • 1/2 c. shortening
  • 1/2 lb. butter or margarine
  • 2 3/4 c. plain all-purpose flour
  • 1 tsp. baking powder
  • 1 box confectioners sugar
  • 3/4 c. crushed pineapple with juice
  • 6 large eggs
  • 1/4 c. milk
  • 1 tsp. vanilla

    Have ingredients at room temperature.

    Cream shortening, butter and sugar; add eggs, 1 at a time.

    Beat thoroughly.

    Add flour alternately with milk.

    Add pineapple and vanilla. Beat 4 minutes by clock. Pour into large tube pan (greased and floured). Bake at 325° for 1 1/2 hours. Do not preheat oven.

    Place cake in cold oven.
