Pineapple Pound Cake

  • 8 eggs
  • 1 tsp. vanilla
  • 1 small can crushed pineapple (juice and all)
  • 3 c. sugar
  • dash of salt
  • 2 c. vegetable shortening
  • 3 c. plain flour

Directions

    Cream the shortening and sugar.

    Add eggs, one at a time, beating after each addition.

    Add flour and salt gradually.

    Stir in vanilla and crushed pineapple.

    Bake in greased and floured tube pan or two 9 x 5-inch loaf pans for 1 hour or until done at 350°.
