Pineapple Preserve Cake

  • 1 c. butter flavored Crisco
  • 4 eggs
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 2 c. sugar
  • 3 c. flour
  • 1 tsp. vanilla
  • 1 c. pecans, chopped
  • 1 c. pineapple preserves (or apricot or a blend of apricot/pineapple preserves may be used)
  • 1 tsp. soda
  • 1 c. buttermilk

    Cream Crisco and sugar; add eggs and mix well until fluffy. Sift flour and spices together.

    Dissolve soda in buttermilk and add alternately with flour mixture into creamed mixture.

    Add vanilla and mix well.

    Fold in preserves and nuts last.

    Bake in 3-9 x 5 x 2 1/2-inch loaf pans at 350° for 1 hour and 15 minutes or until toothpick inserted in center comes out clean.
