  • 4 eggs
  • 1 1/2 teaspoons vanilla extract

    Line and grease a 9x5x3 inch (23x13x8cm) loaf pan

    Sift the flour, baking powder and salt together

    Cream the butter until smooth and gradually add the sugar, while beating at medium-high speed until light and fluffy (3-5 mins)

    Add the eggs one at a time, mixing well at each addition

    Add the flour mixture followed by the zest and fold until incorporated

    Pour the batter into the pan and smooth the top

    Bake for 50-60 mins or until golden brown
