Pineapple Rise

- 1 (20 oz.) can crushed pineapple
- 1 1/2 c. sugar
- 3/4 oz. gelatin
- 6 eggs
- 1/8 tsp. salt
- 1 1/2 c. heavy cream, whipped
Directions

1Drain and grind or puree pineapple.

2Add half sweetener. Remove 1 cup of puree and sprinkle gelatin over the top of it to soften.

3Combine just egg yolks and rest of the sugar and cook over low heat in double boiler, stirring until mixture thickens. Add the gelatin mixture and stir until the gelatin dissolves. Cool to lukewarm and add remaining puree.

4Whip egg whites and salt in a bowl until foamy.

5Fold in whipped cream.

6Gently fold in pineapple mixture.

7Pour into mold or oblong pan.

8Chill until firm, about 2 hours.

9Garnish with whipped cream and strawberries.
