Pineapple Salad

  • 1 large can chunk pineapple
  • 1/2 c. sugar
  • 2 Tbsp. cornstarch
  • 2 eggs, beaten
  • dash of salt
  • 1/2 c. chopped pecans

Directions

    Drain pineapple; combine juice from pineapple with sugar. Add remaining ingredients except nuts.

    Stir until smooth.

    Cook over low heat until thick.

    Cool slightly; add drained pineapple and nuts.

    Mix well.

    Let stand a few hours.
