Pineapple Salad

Ingredients

  • 1 egg
  • 2 Tbsp. cornstarch
  • 1 (20 oz.) can chunk pineapple
  • maraschino cherries (optional)
  • 1 c. miniature marshmallows
  • 1/4 c. nuts
  • 1 or 2 sliced bananas

Directions

    Beat egg.

    Add cornstarch and mix well.

    Add juice from drained pineapple and add water to make 2 cups of juice and water. I add 2 or 3 tablespoons of sugar if using unsweetened chunk pineapple.

    Cook in saucepan until thick.

    Let cool.

    Pour over pineapple chunks, marshmallows, nuts and bananas.

    Mix well. Chill before serving. You can add cherries for color, if desired.
